Sunday Night Baking

Tonight, I made Pumpkin Gingersnaps!  This was a recipe that had been open in my browser for about two weeks.  Well, I finally found an excuse to make them for work and therefore not allowing them to tempt me at home.  I did save a few for us, don't worry, Jon isn't starving.  I think most of you know I love pumpkin and fall/Christmas-like flavors.  Well, this is a pretty great combination.  The only thing I would try to do is get more pumpkin flavor and lessen the cloves I put in.  I also added some pumpkin pie spice and accidentally grated a good amount of nutmeg into the batter.  I swear I read nutmeg on the recipe, I must have really wanted nutmeg, been getting tired or needing my glasses, sad.  I also ended up adding a bit more flour to the second round as these were quite sticky and just didn't look right.  Unfortunately, I never took a picture of the second batch, so these are the sadder looking ones.  But, they still look tasty, right?

Yummers!

Here's the recipe!

Gingersnaps are one of my favorite cookies whether they are the thin and crunchy Swedish kind or the soft, round ones like here.  I remember my Nona making wonderfully dark gingersnaps.  When we lived in Manitowoc, she would send us packages with coffee tins full of carefully wrapped cookies and pizelles.  One of my favorite one to savor were her gingersnaps, yum!  So, this was a nice little reminder of her to me as I've been missing her.  When I bake and cook is when I can hear her voice the most, so I think that cooking with family is so important and creates such good memories.

Those look awesome and I love your line "When I bake and cook is when I can hear her voice the most." Beautiful.
